    14.5 oz can Hunt's Diced Tomatoes, no salt added
    1 tbsp Extra Virgin Olive Oil
    1/4 tsp Pepper, black
    1/2 tsp Salt
    1 cup red Bell peppers
    1/2 cup, chopped Onions, raw
    2 clove Garlic, minced
    1 serving Brown rice (1 cup cooked)
    1/2 cup Broth, chicken
    1/4 tsp Turmeric, ground
    1 cup Pictsweet Baby Green Peas, thawed
    1 tbsp Parmesan Cheese, grated
    6 oz boneless ,skinless chicken breast, cut into bite-size pieces
    bay leaf


If you want to cook the rice in the dish, add 1 3/4 cup chicken broth instead of the 1/2 cup. Cook for 25 minutes after reducing to medium-low and covering pan.


Heat oil in a large, heavy frying pan over medium-high heat. Season chicken with 1/4 tsp salt and 1/8 tsp black pepper. Brown chicken pieces about 6 min., turning often. Transfer to plate and keep warm.

Add bell pepper, onion, and garlic to pan and cook about 5 minutes, until softened. Add broth, rice, tomatoes, turmeric, bay leaf, and rest of salt and pepper. Bring to a boil over high heat.

Reduce heat to medium-low, return chicken and accumulated juices to pan. Cover pan and simmer 15 minutes longer.

Stir in peas and cook for 5 minutes. Remove bay leaf. Sprinkle Parmesan cheese over the top and serve.
