Introduction

This is a perfect recipe for a quick Sat/Sun morning breakfast. This is a perfect recipe for a quick Sat/Sun morning breakfast.

Ingredients

    3 c. French bread, cubed
    3 c. lean ham, cubed
    1/2 c. lowfat Cheddar cheese, cubed
    1 c. sliced, fresh mushrooms
    4 eggs
    3 c. milk.....I used 2%
    1 sm. can sliced ripe olives
    3 T. flour
    1 T. dry mustard
    3 T. butter, melted
    1/2 t. red pepper
    little salt
    OPTIONAL: 1/2 c. finely chopped onions; 1/2 c. finely chopped green peppers

    Spray 9 x 13 pan with non-stick canola oil. Set aside.

    Mix bread, ham, cheese, mushrooms, olives, flour, mustard and butter in large bowl. Spread in your pan.

    Beat together eggs, milk, salt and red pepper. Pour on dry mixture. Refrigerate overnight, covered.

    Bake at 350 for one hour, covered.
