Ingredients

    5 serving Great Value Cheese Tortellini
    4 Great Value Boneless skinless chicken breast, cooked and shredded
    4 tbsp Extra Virgin Olive Oil
    1 cup, chopped Onions, diced
    1/2 cup Green Bell peppers
    1/4 cup all purpose flour
    3/4 cup Milk, 2%
    3/4 cup Swanson Chicken Fat Free Chicken Broth Less Sodium
    1 tsp Cumin - ground
    3/4 cup Colby Cheese, shredded
    1 cup Great Value Monterey Jack Cheese, shredded

Directions

Heat oven to 325 degrees. Spray large casserole dish and set aside.
Bake chicken in the oven for about 30 minutes until done. Let cool then shred and set aside.
Cook tortellini according to package directions.
Meanwhile in a large skillet add 2 tablespoons of olive oil and let heat. Add the diced onions and peppers. Stirring frequently until tender. Remove mixture from skillet and set aside.
Add remaining 2 tablespoons of olive oil. Once heated add flour and whisk continually until smooth. Slowly add milk, chicken broth and cumin. Heat to boiling over medium heat, stirring constantly; remove from heat. Stir in chicken, monterey jack cheese, tortellini and peppers and onion mixture. Pour into casserole dish and bake for 30 minutes.
Remove from oven and sprinkle colby cheese over the top. Return to oven and bake until cheese is melted about 5 minutes.
