Number of Servings: 8


    3 cups Mushrooms, fresh, whole approx 1 package if large cut in half
    2 cups Zucchini, sliced 1/2 inch thick diagonal slices (mixture of green and yellow looks nice)
    1/2 cup Red Peppers, raw, cut up into squares
    Garlic, 1 clove minced
    1/4 cup Lemon Juice,
    2 table spoons Olive Oil,
    1 packet Splenda or 1 tblsp Sugar
    1/4 teaspoon Salt
    1/4 teaspoon Black Pepper
    1/4 teaspoon Italian Seasoning


Put mushrooms, zucchini and red pepper in a large zip lock bag

Prepare marinade
in samll bowl stir tigether garlic, lemon juice, oil, sugar, salt, italian seasoning and pepoer

Pour marinade over vegetables in the plastic bag.
Seal bag and shake the vegetable mixture to coat with marinade.

Marinate vegetaables in refridgerator for 8 hours or overnight, turning bag occasionally

To serve, pour vegetables and marinade into a serving dish. Can be served with toothpicks as an appetizer or as a side dish.
