    4-5 lbs chicken thighs with skin and bones
    2 cups chicken broth
    4 gloves garlic, minced
    2 tsp dried oregano
    1 tbsp olive oil
    Juice of one lemon
    Zest of one lemon.


First cut away any excess fat/skin from the thighs. Combine the garlic, oregano and oil. Rub the mixture under the skin of each chicken thigh. Season both sides of the thighs with salt and pepper. Heat a large skillet on medium high heat. Brown the chicken thighs, but do not cook all the way through. You may want to spray the pan with a little nonstick cooking spray.

Place the chicken thighs into a slow cooker. Deglaze the skillet with the broth and the juice from one of the lemons. Scrape any bits that are stuck to the bottom of the pan (if too much grease accumulated while browning the chicken, I spoon some of it off before I add the broth and juice.) Bring the liquids up to a simmer then pour over the chicken. Cook on high for 4-6 hours or on low for 8-10 hours. When the chicken is almost done cooking. Stir in the lemon zest from the second lemon. I also cut this lemon into wedges and serve it with the chicken. One thigh or so per serving.
