    2 13.5 oz cans Coconut Milk
    1 serving premade coconut yogurt (plain, unsweetend)
    2 Tb coconut sugar
    1 packet Knox Gelatin


* Mix 1/4 cup of the coconut milk with gelatin and coconut sugar until dissolved and set aside
* Heat remaining coconut milk until just below boiling.
* Take off the heat and stir in reserved coconut milk
* Let cool to 100 deg (just warm to the touch)
* Mix in 1 container plain, unsweetened coconut yogurt OR open 2 capsules of high quality probiotic and mix in
* Stir until well combined, pour into 4 individual size or 1 large jar
* Set jars in Instant Pot, push "Yogurt" button and increase time to 12 hours
* When the machine is done, take out the jars and stir well to incorporate separated liquid. Put on lid(s) and refrigerate for an additional 2-4 hours to complete thickening process.

*Note - save 4 Tb (about 1/2 cup) of your yogurt to be the starter for your next batch of yogurt so you don't have to buy a new container every time. Alternately, you can buy yogurt starters OR use more probiotic capsules each time if you prefer.

*Note 2 - the sugar is added because coconut milk doesn't have the natural lactase sugars of cow milk that get eaten away during fermentation. Depending on how long you ferment your yogurt, much/most of the sugar will be converted before you eat it. I calculated nutritional info based on 1 remaining Tb of sugar remaining in the yogurt after 12 hours.
