Ingredients

    1 6-oz can flaked salmon, boneless and skinless
    1/4 cup egg substitute
    juice of half a lemon
    handful of parsley, chopped
    1 clove garlic, minced
    3/8 cup bread crumbs

Directions

To flaked salmon, add egg substitute, parsley, lemon juice, garlic, the bread crumbs and lots of black pepper and a little salt. Mix together and form 2 large patties or 4 mini patties.

Spray a nonstick skillet with cooking spray, heat to medium to medium high heat. Cook salmon patties 2 to 3 minutes on each side for mini patties, 4 minutes on each side for large patties.

Makes 2 servings.
