Ingredients

1 tbsp Extra Virgin Olive Oil
2 tbsp chopped Shallots
1T Mustard, Dijon Stone Ground
1/4 tsp Black Pepper (Ground)
1/8 tsp Salt
5 oz Chunk White Albacore Tuna in water (6oz if u can find)
1.5 tbsp Lemon juice
1 serving Avocado - medium
8T Fat Free Shredded Mozarella Cheese
1 cup, chopped Red Ripe Tomatoes or cherry chopped
Use your favorite bread (not included in charting). I use homemade French Bread.
Directions
Preheat broiler to high.
Combine first 6 ingredients in a medium bowl, stirring well to coat. Place juice in a small bowl. Peel, seed, and chop avocado. Add avocado to juice; toss. Add avocado mixture and tomatoes to tuna mixture; toss well to combine. Sprinkle cheese (2T ea) evenly over cut sides of bread, and broil for 3 minutes or until cheese is bubbly. Place 1 bread slice, cheese side up, on each of 4 plates, and divide tuna mixture evenly among bread slices. Bread not included in this nutrition info. Use your favorite.
