Ingredients

    4 cup Swanson Chicken Broth 99% Fat Free
    16 oz Tyson boneless, skinless chicken breast
    1 clove Garlic
    1 dash Salt
    1/2 tsp Pepper, red or cayenne
    1/4 cup, chopped Pecans, toasted
    2 tbsp Parsley
    1 fl oz Lemon Juice

Directions

In a 2-qt saucepan, bring the stock to simmer. Add chicken, cover and simmer gently until chicken is just cooked through. about 15 minutes. With a slotted spoon, transfer chicken to a bowl and keep warm. Reserve 1/3 c broth and save the remaining broth for another use.
Mince and mash the garlic with the salt into a paste using the side of a heavy knife. Transfer the paste to a blender with cayenne, pecans, parsley, lemon juice and reserved broth. Puree until the sauce is smooth.
Slice the chicken and serve drizzled with the pecan sauce.
