Ingredients

    1 cup Jasmine Rice
    2 cup (8 fl oz) Water
    2 large Radishes
    1/2 cup dice Persian Cucumber
    2 tbsp fresh Parsley
    3 tbsp Distilled White Vinegar
    1/4 tsp Salt
    1/2 tbsp Cilantro, dried
    1 tsp Olive Oil
    Dash of lime juice

Directions

Bring to the boil two cups water with olive oil, cilantro, and rice. Salt to taste. Cover rice and reduce heat to low, simmer for twenty minutes. Allow rice to cool. Chop parsley, radishes, and cucumber. Mix with vinegar, salt, and lime juice. Stir into the rice. Chill overnight to allow flavors to blend.

Serving Size: 1 cup
