Ingredients

1 garlic clove
1 T vegetable oil
1 lb pork tenderloin
1 red onion, cut in 1/2" slices
4 burrito size flour tortillas
8 oz provolone cheese, shredded
1/2 t salt (coarse salt if available)
1/2 t pepper
Directions
makes 4 servings
Use garlic and salt to make a paste. In small bowl, combine with pepper and oil. Rub all over pork.
Preheat grill to high, oil grates if using outdoor grill (I use my George Foreman). Place pork on hottest part of grill and close grill. Cook, turning occasionally, 10 to 20 minutes (should be 155 F).
Let rest 5 minutes, slice across grain.
While meat is resting, put onion on grill and cover. Cook onion until soft and beginning to brown, about 10 minutes.
Reduce grill to medium-low. Layer each tortilla with pork, onion and cheese. Fold tortillas in half, press to close.
Place quesadillas on grill and close. Cook until browned in spots and cheese has melted. Cut into wedges and serve immediately.
Garnish with cilantro, serve with salsa, sour cream and quacamole, if wanted. These items are not in the nutritional value above.
