Ingredients

3.0 clove Garlic
1.0 tsp Ginger Root
1.0 cup, chopped Kale
0.5 cup, chopped Onions, raw
1.0 cup Chickpeas (garbanzo beans)
4.0 cup Imagine Organic Vegetable Broth
1.0 cup Del Monte Diced Tomatoes, No Salt Added
1.0 cup Milk, SO Delicious® Coconut Milk, unsweetened, 1 cup serving
2.0 serving sweet potatoes ( great value organic)
1.0 tsp tumeric
Directions
Dice onion, chopped ginger and garlic and saute.
Add sweet potato cut into bite size pieces
Add seasoning to taste
Add vegetable broth and simmer for 30 minutes
Add rinsed chickpeas and chopped kale (stems removed) simmer for 20 min
Add coconut milk and stir
Serve over brown rice or quinoa
Serving Size: Makes 8 one cup servings
