Number of Servings: 6

Ingredients

    4 cup, cubes butternut squash
    1.5 tsp oil
    1 cup, chopped onions, raw
    3 clove Garlic
    1/2 tsp sea salt
    1/2 tsp cumin
    1/4 tsp coriander
    4 cup chicken broth
    3/4 cup peanut butter
    2 Tbsp tomato paste
    1/2 tsp ground red pepper

Directions

Saute garlic and onions with oil in a pot. Add butternut squash and cook until tender. Add the remaining ingredients except for peanut butter. Blend until smooth if desired. Add the peanut butter and serve with fresh cilantro
