Number of Servings: 1

Ingredients

    1/2 C egg beaters, any variation
    1/4 C feta cheese
    2 T skim milk
    1 T Olive oil
    1/4 C chopped fresh broccoli
    1/4 C sliced cherry tomatoes
    1/4 C black beans
    1/4 C salsa

Directions

Mix egg beaters and milk together. Pour into a medium hot pan with olive oil. Add cheese when eggs start to bubble, add broccoli, tomatoes, and beans. When eggs are done cooking serve with salsa.
