    2 shots Canola Oil Non-stick Spray (2-3 second spray)
    1 cup chopped onion
    1 clove garlic, minced
    1/2 of large red bell pepper, diced
    1 large Jalapeno pepper, seeded, deveined & minced
    1 tbsp Chili powder
    1 tsp Cumin
    1 tsp Salt
    1/2 tsp Pepper, black
    1 1/4 cups 2% milk
    1 3/4 cups unsalted Chicken Stock
    1/4 cup yellow cornmeal, any variety
    1-15 oz can low/no-salt black beans, drained & rinsed
    1-15 oz can low/no-salt Cannellini beans, drained & rinsed
    3 chicken thighs, bone, and skin removed
    3 tbsp instant mashed potato flakes


SPRAY oil in dutch oven or large saucepan over medium-high heat. Add onions, garlic, and both peppers. Cook until onions are tender about 3 minutes.

STIR in the spices and continue cooking for 30 seconds-1minute.

STIR in the milk, chicken broth, and cornmeal. Stir to combine.

IN a crockpot, add the chicken and beans. Pour the onion mixture over the chicken & beans. Cook on low for 4-5 hours.

REMOVE the chicken and shred. Return chicken to crockpot and add the potato flakes. Continue cooking for 30-60 minutes.

GARNISH with crushed taco chips, sour cream, fresh cilantro and hot sauce if you like. (not included in nutritional info)
