Number of Servings: 6


    Sun Dried Tomatoes, 1 cup
    Yellow Sweet Corn, Frozen, 1 cup kernels
    Tomato Sauce, 1 cup
    Zucchini, 4 cup, sliced
    Onions, raw, .25 cup, chopped
    Chicken Broth, 1 cup (8 fl oz)
    Garlic Powder, 2 tsp
    PAM, to coat the pot


Sray a pot with Pam. Add onions and cook until clear. Add 2 tbsp of the broth to steam the onion.
Add s dried tomatoes, tomato sauce corn, poblano peppers. cook for 10 minutes.
Add rest of broth. cook for 7 minutes. Add zucchini stir it and cook for 2 minutes. turn the heat off. Leave the pan covered for 3 minutes. remove from heat serve with melted cheese ( opcional = cheese calories are extra)
