    2 large egg whites
    1/2 tsp cream of tartar
    2/3 cup granulated sugar
    1 tsp vanilla extract


preheat oven to 350 and line a baking sheet with parchment paper. in the bowl of an electric mixer, beat egg whites until foamy. add cream of tartar and beat until fluffy but not dry. add sugar gradually. once half the sugar is added, add the vanilla. continue beating and adding the sugar in batches until all the sugar is dissolved and meringue is shiny and tight. Push a teaspoon full of meringue with the back of another teaspoon onto the lined baking sheet, with one inch between each cookie. place cookies in the preheated oven and turn it off. leave the cookies undisturbed for at least two hours, maybe even all night, until they are crisp and dry.
