    1 cup flour
    pinch of salt
    1 egg
    1 egg yolk
    1/2 to 2 cups milk
    1 tbsp melted butter
    1/2 tsp vanilla extract


sift the flour and salt into a bowl. make a well in the center and add the egg and egg yolk. pour in the milk slowly, stirring constantly. when half the milk is added, stir in melted butter and vanilla. beat well until smooth. add the remaining milk, stir, and cover. let stand at room temperature for at least 20 minutes. Heat w well-greased 6-inch skillet over medium-high. add just enough batter to lightly cover the bottom of the pan by tipping it from side to side. cook until both sides are golden brown. unused crepes can be separated with wax paper, wrapped in plastic and frozen. you can reheat them in a 200 degree oven just until warm
