Ingredients

    4 oz Boars Head Pancetta (by CSUCAM)
    6 large Egg, fresh, whole, raw
    1 cup, shredded Cheddar Cheese
    1 cup Spinach, fresh
    1.5 oz diced green chilis, 1can (by LYNNRJ1)
    .25 cup, chopped Onions, raw
    1 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil

Directions

preheat oven to 350. grease muffin cups with coconut oil.
sautee pancetta and onions together. whisk eggs, chop spinach, grate cheese. mix all ingredients together, spoon into 12 cups evenly. bake for 20-25 minutes or until set.
