    400 g eggplant
    320 g zucchini
    150 g lasgne noodles oven ready
    14 oz can tomato sauce
    90 g low fat chedday
    2 tbsp pesto
    2 tsp olive oil


8 x 13 dish -- serving size1/.4 dish

Slice lengthwise and spray eggplant and zucchini slices with cooking spray. Place on baking sheet with 2 tsp olive oil. Bake/grill until soft.
First layer is tomato sauce, then 3 noodles, spread on 1 tbsp pesto
Next layer is zucchini and 1/3 cheese grated.
More tomato sauce, noodles and pesto
Top layer is eggplant, rest of tomato sauce and rest of cheese grated on top
