Ingredients

    1.5 cup Beans, black (1 - 15 oz can, rinsed and drained)
    2 cup Sweet Corn, Fresh or frozen
    2 cup cherry tomatoes, halved
    2 large bell peppers (any color), diced
    .5 cup, red onion, chopped
    2 Jalapeno Peppers, finely diced
    .33 cup Lime Juice
    .25 cup Olive Oil
    0.25 cup fresh cilantro, chopped
    1 tsp Salt
    .75 tsp Cumin, ground
    .5 tsp Cayenne Pepper
    0.25 tsp ground Black Pepper

Directions

Mix all ingredients and refrigerate for 2-3 hours to let flavors blend. Then enjoy.

Serving Size: Makes 8 generous servings of about 1 cup each
