    4 Large Brown Potatos cubed
    4 Cloves Garlic Chopped
    2 Tbsp Shallot chopped
    1/2 Yellow onion
    4 Leeks Light part only, chopped and rinsed
    8 cups Vegetable broth
    1 tablespoon olive oil
    1.5 Tbsp cornstarch
    Cayan to taste


Add olive oil to pan. Saute onions, shallots, and garlic until soft. Add in potatoes and saute for two minutes to absorb flavor. Add in salt, pepper, cayan and broth (reserve one cup of broth). Boil until potatoes are soft. Remove 1/3 of mixture place in blender. Put cornstarch in reserved broth, mix until dissolved, pour into blender with mixture and blend until smooth. Add this back into soup and mix. Serve warm with cheese on top if you like. makes approximately 8 one cup servings. If you prefer meat you can substitute chicken broth. You can also add 1 cup heavy cream to make it richer.
