Ingredients

    # Chicken, cornish hens, 1 bird whole
    # Spinach, fresh, 1 cup
    # Feta Cheese, 1 cup, crumbled
    # Salt, 1 tsp
    # Garlic, 4 tsp
    # Parsley, 3 tbsp

Directions

Preheat oven to 375

Rinse and dry cornish hen. In a bowl mix parsely, garlic, salt, feta cheese, and chopped fresh spinach.
Stuff bird with mixture.

Place in baking dish.(you may want to drizzle olive oil on the surface to prevent sticking.

Cook for 45 minutes or until thoroughly cooked.

    I agree that it took a little longer - more like an hour, but worth it. Very good - added a few of my favorite spices, and the spinach/feta mixture is rich, but not overpowering. Nice recipe, will make again - my boyfriend loves it too! - 4/27/10

    My husband didn't like the spinach, but I did. I added capers to the receipe and red pepper, cause I like it spicy. It was good. yum! :-) - 1/20/08

    I tried this recipe and was very pleased, but instead of just Parsley I added fresh rosemary, thyme and sage, just scrumptious! I would recommend cooking a bit longer, it took an hour to fully cook my bird. - 3/20/07
