Ingredients

1.25 cup, sliced Summer Squash
1.25 cup, sliced Zucchini
5 slice, large (1/4" thick) Onions, raw
2.5 cup Bell peppers (Green, Red, Yellow, Orange)
2 tbsp Extra Virgin Olive Oil
.5 tsp Salt
.25 tsp Pepper, black
Chop bell peppers into 1 inch pieces. Cut onion slices in half.
Tips
Other vegetables are easily added or substituted: mushrooms, halved can be added after turning. Baby carrots sliced lengthwise are also good.
Directions
Preheat oven to 450. Spread chopped vegetables among large baking sheets covered in parchment paper or foil lined pan liner paper. Drizzle 1 TBSP of the oil on vegetables in EACH pan. sprinkle with salt and pepper. Cook for 12 min. Flip/stir/turn. Sprinkle more S&P if desired. Roast an additional 10-12 min.
