    8 oz Mozzarella Cheese, part skim milk shredded
    1.5 lb. Tyson boneless, skinless chicken breast diced small
    8 oz. Baby Bella Mushrooms diced
    0.5 cup, chopped Sweet peppers diced small
    1 cup Garden Fresh Salsa, Jack's Special Medium
    Cooking spray
    1 package (10 oz) Spinach, defrosted and drained well

Directions

Cook chicken Stir fry veggies and mushrooms Add spinach Fill lined and greased cupcake pans 3/4 of the way full Bake at 350* for 30 minutes
