Introduction

For vegetarian chili, substitute 1 lb soy crumbles for pork. For vegetarian chili, substitute 1 lb soy crumbles for pork.

Ingredients

    1 tbsp Canola Oil
    1 large yellow onion, chopped
    1 tbsp minced garlic
    16 oz ground pork
    1.5 tbsp chili powder
    2 tsp Cumin (ground)
    1/2 tsp crushed red pepper flakes
    1/2 tsp Smoked Paprika
    12 oz light Beer, at room temperature
    1.5 tbsp Reduced Sodium Soy Sauce
    2 (14.5 oz) cans Chili Beans
    2 (14.5 oz) cans Pinto Beans
    2 (14.5 oz) cans Fire Roasted Diced Tomatoes
    2 Whole Bay Leaves
    2 tsp Dried Oregano

Tips

Serve with cornbread and hot sauce, if desired.


Directions

Heat oil in large pot over medium heat. Add onion and garlic and cook 3-4 minutes. Add pork and cook 2-3 minutes, stirring with wooden spoon to break up large pieces. Add chili powder, cumin, red pepper flakes, and paprika and cook, stirring, until spices are slightly toasted and fragrant, 1-2 minutes.

Stir in beer and soy sauce. Add chili beans, pinto beans, tomatoes, and 1 cup water and mix well. Add bay leaves and oregano and stir to mix.

Bring chili to a low boil and cook 10-15 minutes, stirring about every 5 minutes. Reduce heat and simmer gently, stirring occasionally, 30-40 minutes. Discard bay leaves before serving.
