    2 tbsp extra virgin olive oil
    2 small onions, cut into 1/2 in dice
    3 celery ribs, cut into 1/2 in dice
    4 carrots, thinly sliced
    1 clove garlic, minced
    3/4 tsp chopped rosemary
    5 c low sodium, no fat chicken broth
    1 c water
    1 bay leaf
    kosher salt and fresh ground pepper
    2 new potatoes, peeled and cut into 1/2 in dice
    1/2 c frozen peas, thawed


Makes 8 one cup servings
Heat the oil; add onions, celery, carrots and potatoes & cook over moderate heat, stirring for 8 minutes.

Add the garlic and rosemary and cook for 1 minute. Add the broth, water and bay leaf. Simmer 20 minutes. Season with salt and pepper.

Lower heat and simmer 5 minutes. Remove from heat and stir in the peas. Cover and let stand for 5 minutes. Discard the bay leaf and serve.
