A combination of several of my favorite recipes into a filling, delicious, low calorie snack bar! A combination of several of my favorite recipes into a filling, delicious, low calorie snack bar!
Number of Servings: 30


    Chewy Granola Bar Base (adapted from the recipe submitted by STERNENFEE):
    2 1/2 cups old fashioned oats
    1 cup whole wheat flour
    1 tsp baking soda
    1 tsp vanilla extract
    1/2 cup applesauce
    1/4 cup light corn syrup
    1/3 cup packed brown sugar

    Pumpkin Cake Layer (adapted from the recipe submitted by SANDYVANB):
    1 cup wheat flour
    1/2 cup all-purpose flour
    1 cups sugar
    1 teaspoons baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon ground cinnamon
    1/4 teaspoon salt
    1/8 teaspoon ground cloves
    1/8 teaspoon ground nutmeg
    1/3 cup unsweetened applesauce
    1/3 cup egg substitute
    1/2 of 15 oz can pumpkin
    1 cup raisins


Preheat oven to 350.
Lightly grease and flour two 9x13 inch pans.

Chewy Granola Bar Base:
In a large mixing bowl combine the oats, flour, baking soda, vanilla, applesauce, syrup and brown sugar. Lightly press mixture into the prepared pans.

Pumpkin Cake Layer:
Combine flour and next 7 ingredients (through nutmeg) in a large bowl; make a well in center of mixture. Combine applesaucel, eggs, and pumpkin in a medium bowl; stir with a whisk until smooth. Add to flour mixture, stirring just until moist. Stir in Raisings.
Spoon batter on top of granola layer. Bake at 350 for about 25 minutes, or until a knife inserted into the pumpkin layer comes out clean.

Let cool for 10 minutes, then cut into bars. Let bars cool completely in pan before removing.
