PANCAKES
3 large Egg, fresh, whole, raw
1/2 C flour
1/2 C milk
2 T butter, melted
Pinch of salt
FRUIT SAUCE
2 cup, unthawed Blueberries, frozen (unsweetened)
1 C Water
2 tbsp Corn Starch
4 T granulated sugar
8 tbsp Cool Whip, Extra Creamy

Directions
1. Preheat oven 400 F - Coat 2 (9 in) cake pans with cooking spray.
2. Beat eggs - slowly add milk, flour, salt & melted butter - Divide equally & Pour into pans - Bake in oven 10 min. - Reduce heat to 350 F and bake additional 5-7 min.
3. While baking - Boil Fruit, water, sugar & cornstarch until it thickens into a sauce.
4. Place pancakes on platters - divide sauce over pancake - top with cool whip.
