Ingredients

    1070 grams (4 large) sweet potato
    425 grams (1 15-oz can) black beans
    180 grams (1 medium) onion
    85 grams (2 ribs) celery
    250 grams (9 oz) bbq sauce

Tips

If you have a recipe for lower sugar homemade bbq sauce, this is probably a good time to use it, especially if you are making this recipe for a diabetic. A filling serving size of 335 grams makes for 75 grams of carbohydrates. Ouch.


Directions

Peel 4 sweet potatoes and cut each one into 8 pieces of about equal size.

Drain and rinse the can of beans.

Chop the onion and celery.

Place sweet potato chunks at the bottom of the slow cooker.

Combine the rest of the ingredients in a bowl.

Pour the mixture over the sweet potato chunks.

Cover.

Cook on high 2-3 hours, or on low 4 hours.
