Ingredients

1.0 cup, chopped Onions, raw
1.0 tbsp extra virgin olive oil
16.0 oz Lean Ground Sirloin, browned and drained
14 oz can petite diced tomatoes with liquid
2 cups (8 fl oz each ) Water
2.0 tsp Better Than Bouillon Chicken Base
2 14 oz. cans dark red kidney beans, drained
1.0 tsp ground cumin
2.0 tbsp Tony Chachere's Cajun seasoning - or similar!
3.0 tbsp chili powder
1.0 tbsp Oregano, ground
2.0 tsp minced garlic
1 bay leaf
Optional:
1/4 cup all purpose flour
3 tbsp. water
Directions
Saute onion until tender in oil. Add cooking spray if needed.
Add to crock pot with tomatoes, water, chicken base, and cooked ground sirloin. Cook on high setting for 2 hours. Stir occasionally.
Reduce to low setting and cook for 2 more hours. Add more water if needed. Add drained beans and spices the last hour.
Optional: During the last 30 minutes, mix flour with water until smooth. Whisk some or all into chili and continue cooking for 30 minutes. (This is optional, but makes chili thicker.)
Serve in a jumbo mug garnished with sharp shredded cheddar cheese, diced onions and jalapenos, and/or over cooked spaghetti! Yum!
