    4 Green Bell Peppers, tops cut off and seeds removed
    1/4 of a Red Onion, chopped
    2 tsp chopped Garlic
    1 cup chopped Kale
    5 Portabella Mushrooms, diced
    1 Roma Tomatoes, diced
    1 Anaheim Chili Pepper, chopped with seeds removed
    1 tbsp Olive Oil
    1 cup Jasmine Rice
    1/2 tsp Oregano
    1/2 tsp Basil
    1/2 tsp Thyme
    1tsp Olive Oil
    2 cup (8 fl oz) Water
    1/3 cup crumbled Feta Cheese


Place the bell peppers in a 400 degree oven until wilted (about 15 minutes). Prepare the rice: bring the water, 1 tsp olive oil, rice, salt to taste, and herbs to a boil; reduce heat to low and simmer for twenty minutes. SautÚ remaining olive oil and garlic. Stir in onion and kale, and stir until beginning to caramelize. Stir in the Anaheim chili, tomato, and mushrooms. Stir continuously until tender and slightly charred. Mix the rice into the sautÚ, and stir in the feta cheese. Fill each bell pepper to the top with the rice mixture. Place in the oven for ten minutes, or until feta has melted. Serve warm.
