Number of Servings: 6


    1 can (16 oz) fat-free refried beans
    1 can (14.5 oz) low-fat or fat-free chicken broth
    1 can (5 oz) 94% fat-free chunk chicken, with liquid
    1 can (11 oz) whole kernel corn, with liquid
    1 can (15.5 oz) black beans, rinsed and drained
    3/4 cup chunky salsa
    2 cups (8 oz) light or low-fat shredded mild cheddar cheese, divided
    low-fat or baked tortilla chips


Combine first six ingredients in a 3-quart pot. Bring to a boil over medium heat, stirring until the refried beans are completely mixed with other ingredients. Turn heat to low and simmer for 10 minutes, stirring occasionally. Add 1 cup cheese and stir until melted. Remove from heat. Crumble 3-4 chips in the bottom of each serving bowl. Ladle soup over chips and sprinkle with remaining cheese (if desired).

Makes 6 servings (approximately 1.5 cups each).
