Number of Servings: 4

Ingredients

    1 cup, sliced Zucchini --I sliced the long way, but that was my preference to cover the bottom of a PAM sprayed baking dish.
    2 cup, pieces or slices Mushrooms, fresh--set one layer over squash.
    3 oz Mozzarella Cheese, part skim milk --sprinkle shredded cheese evenly over mushrooms.
    3 oz baby spinach--distribute over cheese
    1 cup (not packed) Cottage Cheese, 2% Milk-fat--spread this over spinach. A knife helps.

    shake spices to taste over cottage cheese.--
    1 tsp Tones Rosemary Garlic
    1 tbsp Basil
    1 tbsp Parsley, dried
    1 tbsp Garlic powder

    Add as garnish on top leftover veggies if you have them.
    .25 cup, sliced Summer Squash

    Bake in the oven until the veggies are tender and the cheeses are melted.

Tips

You could make this the night or morning before. It would keep in refrigerator. Our might need to add 10 minutes to cooking time, or just put it in while oven is preheating. That would bring it up to temperature.


Directions

Spray baking dish with PAM.
I baked at 450 for 25 minutes and 350 for 40 minutes.
This was because I had something else in oven.
You might try 350 for 1 hour.
