Ingredients

12 ounces turkey breast meat shopped into bite sized pieces
2 cups mashed potatoes
2 cups frozen sweet corn
1 cup onions chopped (rather large pieces)
3 tsp olive oil
1 tsp salt and pepper
2 tblsp sage
1 tblsp basil
2 tablespoons flour
1/2 cup chicken broth
Directions
You must already have the mashed potatoes ready (leftover preferably) or make them and sit them aside.
Chop the turkey into bite sized pieces; chop the onion into rather large pieces and place these two ingredients into a sautee pan that has the olive oil in it and saute them for about 4 to 7 minutes, add the corn and let it simmer over a low heat for about 2-4 minutes. remove from the pan but keep the oil, add the flour to the oil and reheat until the flour starts to bubble then add the chicken stock to make a gravy, stir this gravy in the meat and vegetable mixture. Spray a casserole dish with Pam and spoon in the mixture. Top it with the mashed potatoes spread out the potatoes to cover the top completely. Bake for 30 minutes until bubbly hot and serve with a salad and fruit dessert. My husband loves this meal!

This is obviously more than one serving...I hope. Sounds good, but I'm guessing this is actually 3 or 4 servings. I will definitely try this! - 6/17/08
