    1 TOlive Oil, 1
    4 Green Peppers
    1 Large red Onions, separated into rings
    1 T Balsamic Vinegar
    1 t Basil, .
    1/2 t Salt
    1/4 t Pepper
    2 plum tomatos, chopped
    3 T Water


Heat oil in large skillet over medium heat. Add bell peppers and onion. Cook, stirring occasionally, for 5 minutes, or until onion starts to soften.
Add vinegar, basil, salt and pepper and cook for 1 minute. Add tomatos and water. Reduce heat to low, cover and simmer for 8 minutes, or until vegetables are tender.
