Ingredients

    Nonstick cooking spray
    2 10 oz cans red or pink salmon, drained and flaked
    8 soda crackers, crushed
    1 egg beaten, or 1/4 cup Egg Beaters
    1 Tbsp Lemon juice
    1/4 tsp. salt
    1/4 tsp. pepper

Directions

Spray a nonstick skillet with cooking spray. Heat over med. heat. Comine all remining ingredients in a med. mixing bowl. Form salmon mixture into 4 patties. Cook patties over med. heat until brown (about 8 min.). Turn and cook on other side for about 8 min.
