    1 pound zucchini and or yellow squash
    1 red bell
    1 green pepper
    1 yellow pepper
    2 tablespoons olive oil
    2 tablespoons fresh chives
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    1/4 cup grated parmesan cheese


Cut zucchini, squash and peppers into strips. Heat olive oil in skillet. Add chives and saute briefly. Add zucchini, squash and peppers and saute until soft. Remove from heat and add parmesan chesse and toss to coat.
