Ingredients

3 large, over-ripe bananas, mashed
½ cup sugar
2 tbsp Truvia Baking Blend
1 egg
⅓ cup melted butter
¾ cup all-purpose flour
¾ cup spelt flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
¼ tsp nutmeg
¾ cup coconut granola, for topping
Tips
Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.
Directions
Preheat oven to 350 F and grease muffin tins.
Combine bananas, sugar, Truvia, egg and melted butter in a large bowl.
Add flours, baking powder, baking soda, salt and nutmeg.
Mix until just smooth.
Scoop into muffin pans and top with granola.
Bake 25 to 30 minutes.
