Number of Servings: 4


    4 Boneless skinless chicken breast halves (4oz each)
    2 whole limes
    1 tsp ground cumin
    2 cloves of garlic
    1 tsp salt
    1 and 1/2 tbsp of olive oil
    1 each yellow, red green pepper, cut into strips
    1 small onion (to measure 1 cups sliced)
    8 whole wheat tortillas
    1 cup shredded low far cheddar cheese


1. Combine juice of 2 limes with salt, cumin, crushed garlic cloves and 1/2 TBSP olive oil. Mix well. Add chicken breast halves. Marinate for 10 minutes to all day.
2. After marinating, preheat grill or grill pan to medium heat. Cook chicken for 6-7 minutes per side until juices run clear or meat thermometer registers 160F degrees
3. Meanwhile, saute cut pepper strips and sliced onion in remaining 1 tbsp olive oil.
4. Cut chicken into strips and serve with cooked peppers, warm tortillas and shredded cheese.
