    1/4 Block of firm tofu, drained and pressed, cubed

    1/2 cup shredded green cabbage

    1/2 Red pepper sliced thin, inch long slices

    4 tbsp. sliced shallots or green onion

    1 tsp. Splenda or other sugar free sweetener

    2 tbsp. Wine vinegar, any kind

    2 tbsp. Soy Sauce

    1 tbsp. cornstarch mixed with 1/4 cup water

    6 cups water

    2 egg whites or 1/2 cup egg substitute


Heat water to boiling adding vinegar, sugar, soy sauce, tofu, and vegetables. Cook on low boil for 5 minutes and add cornstarch mixture, stirring to prevent lumps. Adjust seasoning to taste at this point and then add the egg or egg substitue beaten well in a thin drizzle while stirring the soup to create the ribbons of egg classic to this soup. Garnish with chili oil or tobasco sauce, if desired.
