    1 can salmon
    1/2 cup onion (or less to suite your taste)
    2 large eggs or egg substitute
    1 1/2 tbls flour
    1 1/2 tbls cornmeal
    1/2 cup Corn, Canola or Vegetable oil
    1 tsp baking powder
    seasoning salt and pepper to taste and a squeeze or two of lemon to mix in before frying.


Mix all ingredients together except for oil. Form into patties and fry on both sides until golden brown. To lighten this up use the egg substitute and just enough oil to wet the skillet. You can't use non stick spray because the oil is needed in order for them to turn out nice and light. Pair this with a salad, or brown rice.
