Introduction
This recipe uses tofu that has been frozen then thawed and drained. Make sure to squeeze out as much water as possible to make room for the amazing flavors to soak in. Ingredients

14 oz Extra Firm Lite Tofu (previously frozen and drained )
1/4 cup soy sauce (low sodium)
1/4 cup cider vinegar
2 TBS maple syrup
1 TBS olive oil
1 tsp cumin
1 tsp ground chipotle powder
1 tsp Jamaican Jerk Seasoning (I use Walkerswood Jamaican Jerk Seasoning Hot and Spicy)
Directions
Preheat oven to 350
1. Slice Tofu (approximately 1/2 inch thick) and place in baking pan
2. Wisk soy sauce, cider vinegar, maple syrup and olive oil in small bowl.
3. Mix in cumin, chipotle powder and Jamaican jerk seasoning.
4. Pour mixture over tofu and flip tofu slices to make sure sauce gets on all the slices.
5. Cover and bake for 30 minutes.
6. Remove cover and check after 30 minutes. The sauce should be reduced by at least 1/2.
7. Bake uncovered 15-30 minutes more till the sauce has been completely absorbed by the tofu (this is why it is important to squeeze as much moisture out of the tofu in the beginning).
