Ingredients

1 cup *lentils, great value dried
2 tbsp Extra Virgin Olive Oil
1 cup, chopped Onions, raw
3 clove Garlic
1.5 cup, chopped Kale
3 plum tomato Red Ripe Tomatoes
1 tsp Morton Iodized Salt
Directions
1) Saute onions in olive oil 'til slightly caramelized
2) Add garlic; let soften
3) Add lentils; stir a bit.
4) Add five cups water
5) Increase heat and bring to boil, then simmer for a half hour 'til lentils are mashable
6) add chopped vegetables; let cook for about seven minutes 'til they have softened
7) remove from heat; add salt. (note: do not add salt while cooking, or lentil skins will toughen)
Enjoy! If you have some extra fat or calories left for the day, a small knob of real butter is comforting. A squeeze of lemon is also nice.
