Number of Servings: 6


    1/2 lbs green beens
    2 rounded tsp Dijon Mustard
    2 tbsp sugar
    1/4 cup red wine vinegar
    1/2 cup extra virgin olive oil
    1 can (15 oz) garbanzo beans, drained
    1 can (15oz) red kidney beans, drained
    1/4 cup chopped fresh flat leaf parsley (or substitute 2 tbsp dried parsley but it's not as good)
    salt and freshly ground black pepper to taste


Combine Mustard, sugar and vinegar. Whisk in oil. Add beans and parsley. Toss to coat. Season with Salt and Pepper.
Great the next day too as flavors meld even more!
