Introduction

This is my low carb version and it is WONDERFUL, even if I do say so myself. Very rich & very filling. This is my low carb version and it is WONDERFUL, even if I do say so myself. Very rich & very filling.

Ingredients

    24 oz Baby Portabella Mushrooms, whole
    1 pound ground Italian Sausage
    1 cup, chopped Onions
    1 tsp minched Garlic
    1 tsp Parsley, dried
    6 oz Parmesan Cheese, grated, divided

Tips

This can be served as an appetizer or as a side dish.


Directions

PRE-HEAT oven to 350.

REMOVE the stems from the mushrooms and chop the stems into a large dice. Brush any dirt off the caps.

IN a large pan saute the chopped mushroom stems, sausage, and the onion, breaking up the sausage into small pieces as it cooks. About 4-6 minutes. Drain any grease.

ADD the garlic & parsley, Stir to combine. Add 5 ounces of the parmesan cheese and stir constantly for 2-3 minutes until all is combined and the cheese has melted.

PLACE the mushroom caps, bottom side up, on a baking sheet. Using a spoon or a small cookie scoop, place about 1 tablespoon of stuffing on top of each mushroom cap. Move the mushrooms to the oven and bake for about 15 minutes.

REMOVE the mushrooms from the oven and sprinkle each one with the remaining ounce of parmesan cheese. Return to the oven and bake for another 3-5 minutes until the cheese is toasty brown.
