Introduction

Ingredients

    4 medium Zucchini, baby (approximately 1 - 2" in diameter and 6" long). shredded
    1 tsp Salt
    2 tbsp chopped Onions, raw
    1 large Egg, fresh, whole, raw
    2 tbsp Parsley, dried
    2 tsp Dried Oregano flakes
    2 tbsp Basil, fresh or 2 tsp dried basil
    1 - 2 cloves Garlic, minced
    .5 cup Bread crumbs, dry, grated, plain
    2 tbsp Extra Virgin Olive Oil

Directions

Grate the zucchini into a bowl. Mix with the salt and refrigerate for at least an hour.

Place the zucchini in a cheesecloth or flour sack towel and squeeze out as much liquid as possible. (If you are on a restricted sodium diet you could also rinse the zucchini to make sure most of the salt is out and squeeze again).

Mix the zucchini with the other ingredients. Add only enough bread crumbs (or crushed saltine crackers) until you are able to form a loose patty. Make 8 patties from the mixture, keeping as flat as possible while still allowing the patties to stay together.

Heat the olive oil in a frying pan over medium heat. Place the patties in the pan. Once they start cooking you can use a spatula to push the edges in to help form it. Cook each side for approximately 5-8 minutes or until golden brown and fully cooked.

Serve immediately.
