    2 cups cooked couscous
    1/3 lb asparagus, cut into 1" pieces
    2 scallions, sliced
    2 medium tomatoes, cubed
    1/4 cup chopped fresh basil
    3 tbsp. Italian dressing


Preheat oven to 400F.
Toss asparagus and scallions with 1 tbsp. dressing. Roast in oven for 10-12 minutes.
Combine couscous, roasted vegetables, tomatoes, basil, and 2 tbsp. dressing.
Serve warm or at room temperature.
