Introduction

this makes a nice brunch entree with a salad of spinach and spring greens this makes a nice brunch entree with a salad of spinach and spring greens

Ingredients

    8 large eggs
    1/2 cup of low fat buttermilk
    1/2 tsp salt
    coarsely ground black pepper to taste
    2 tablespoons fresh chopped chives
    2 tsp butter or margarine
    2 packages of goat cheese

Directions

preheat oven to 375 F. In medium bowl with wire whisk, beat eggs, buttermilk, salt and pepper until well blended. Stirr in chives.

In oven-safe nonstick 10 inch skillet, melt butter over medium heat. Pour in egg mixture. Drop Tablespooons of goat cheese on top of egg mixture. Cook on stove until egge mixture begins to set around edges, 3-5 minutes.

Place skillet in oven and bake until frittata is set, 10-12 minutes. To Serve, flip onto plate and cut into 8 wedges.
