Ingredients

    4 tbsp Apple Cider Vinegar, Bragg's Organic
    4 tbsp Braggs Apple Cider Vinegar
    10 tbsp Extra Virgin Olive Oil
    4 tbsp Extra Virgin Olive Oil
    2 tbsp chopped Shallots
    2 cup Brussels sprouts, fresh
    1 small Onions, raw
    1 sweetpotato, 5" long Sweet potato
    1 tsp Thyme, dried (by JANYTOO)
    0.50 tsp Diamond Crystal - Kosher Salt (by SHIRTTALES)
    0.50 tsp Black Pepper (Ground) (by TIARENEE)
    3 thigh, bone and skin removed Chicken Thigh
    3 tsp Dijon Mustard (Great Value)
    .33 tbsp Honey
    2 cup, chopped Kale
    .50 cup, packed Raisins
    .25 cup Parmesan Cheese, grated
    3 cup Uncle Ben's Instant Whole Grain Brown Rice

Directions

Preheat oven 425. On a lined baking sheet, mix Brussels sprouts, sweet potato and onion with 1 tbsp olive oil. Season w/salt, pepper and thyme. Bake until vegetables are tender 25-30 minutes.

Meanwhile, make the vinaigrette. In a large bowl, whisk cider, vinegar, olive oil, shallot, mustard and honey until smooth and combined. Season with salt and pepper.

Ina medium bowl , mix kale with raisins. Add 1/3 c prepared dressing to the salad and toss.

Assemble bowls. Top 1 cup rice with 1 cut roasted vegetables, 1/2 cup salad, and 1 cut grilled chicken. Toss with a drizzle of dressing and serve.
